Rochester, NY

Rochester a  Rondout Valley town in Ulster County known mostly by the names of its two largest hamlets, Accord and Kerhonkson, tucked between the Shawangunk Ridge and the Catskills. It has the largest number of continuously inhabited stone houses in New York State, some dating back to the 1700s, a legacy of the Dutch and Huguenot farmers who worked this valley long before it was a weekend destination. Today it's a mix of old and new: orchards and farm breweries like Arrowood and Westwind sitting alongside the same fields the D&H Canal once ran through, with the Shawangunks right there for hiking and climbing whenever you want them. It's quieter and less discovered than New Paltz, but it's got just as much going on if you know where to look.
